Let's be honest, making a traditional pie from scratch on a busy weeknight just isn't happening for most of us. But sometimes you really just crave a warm, comforting meat pie without the three-hour time commitment.
I use this quick pork pie method all the time, and it is a total lifesaver. By taking a shortcut with store-bought puff pastry and cubing the meat so it cooks faster, you get all those cozy, savory flavors in under an hour.
The Grocery List
You don't need anything overly complicated for this. Here is what you should grab:
2 Tbsp oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1 lb pork, cut into cubes
A little flour for coating the pork
1 Tbsp fresh sage leaves, chopped
3 ½ Tbsp dry sherry
2 tsp Dijon mustard
½ lb button mushrooms, sliced thin
2 Cups good quality vegetable stock
1 roll of readymade puff pastry
Why This Method Works
Tossing the pork in a bit of flour before frying is the real trick here. It naturally thickens your gravy while the meat cooks. Combine that with the sherry, mustard, and fresh sage, and the sauce ends up tasting like it was simmering on the stove all afternoon.
How to Throw It Together
1. Soften the aromatics
Grab a pan, warm up your oil, and toss in the chopped onion and garlic. Fry them around until they soften up and smell great.
2. Brown the meat
Dust your pork cubes in the flour, shake off the excess, and add them to the pan. Cook them until the meat gets a nice golden-brown crust.
3. Build the gravy
Stir in your chopped sage, sherry, Dijon mustard, sliced mushrooms, and just one cup of the vegetable stock. Turn the heat down a little and let the whole thing gently bubble for 15 to 20 minutes.
4. Check the consistency
Keep an eye on it while it simmers. If the gravy starts looking too thick or dry, just splash in a little more of that leftover vegetable stock until it looks moist and saucy.
5. Prep the pie
Preheat your oven to 356°F (350°F works perfectly fine if you have standard oven settings). Pour your warm meat filling into a 7-inch pie dish. Unroll your sheet of puff pastry and drape it right over the top. Trim off any extra dough hanging off the sides, and crimp the edges with a fork to seal it.
6. Bake to golden
For that bakery-style shine, brush the top of the pastry with a beaten egg. Pop the dish in the oven and bake for 15 to 20 minutes until the pastry is puffed and golden brown.
Let it cool for just a minute or two before cutting into it so you don't burn your mouth on the hot gravy!
